Up-to-date—whew!
Updated: May 26, 2021
Except for three recipes, one from Halloween, I have published everything up to today! These three will be coming soon as well.
Wow.
Typing this feels incredible. I feel like a weight has been lifted off of my shoulders. I can't express how frustrating and stressful it has been being behind, week after week. It has caused me to spend much more time working on this blog than I would have liked, taking away from other parts of my life. It has hindered me from being able to enjoy cooking each recipe in the moment.
With mom drama, and a failed original direction and format, I got behind from the beginning, all the way up until now.
I'm so glad I have finally made it.
From now on, for the remaining 6 months of this challenge, everything will be posted day-of/week-of.
And I'm just in time to wish you all a wonderful Thanksgiving! There is so much to be grateful for. There is so much that I take for granted every day. I hope you take the time, this Thanksgiving, to say your thanks for everything. Big and small. According to word on the street, practicing gratitude is good for your mental health and happiness. I've had a gratitude journal sitting by my bed, blank except for a couple of pages. I think I'm going to try to take the time every day to write down a few things I'm grateful for.
Last night, I zoomed with my grandma, who lives in Georgia, to make pumpkin pie together. So, actually, I have completed 46 recipes. The raw pumpkin-maple pie with baked oat crust from Oh She Glows is firming up in the freezer right now for tonight!
For the past three days I've been typing away at my computer, pushing out post after post. I'm going to take a much needed break from the computer for the rest of today. I'll be back tomorrow evening cooking the ultimate fall comfort side-dish.
My agenda for the rest of today:
Eat lunch
FaceTime with a longtime friend from Massachusetts
Take a nap
Read
Clean my bedroom, bathroom, and office
Play Harry Potter Clue with family
Yin yoga
Thanksgiving dinner with grandparents
Eat pumpkin pie!
Wishing you all the best,
The Veg Out Girl
