* Spa Day Bircher Muesli *

Oh She Glows

The first time I made this, it was meant to be a special breakfast for two. I prepped it on Sunday evening to sit overnight in the fridge.

Monday morning brought on the heat, and this was a wonderfully refreshing breakfast for a hot day. Full of goodness with apples, oats, and coconut yogurt; and topped with fresh fruit, toasted almonds and a drizzle of maple syrup; it was absolutely delectable! My mom and I gobbled it all up!


This was far beyond any of the overnight oats recipes I have eaten! The flavor is magical and exploding in its abundance, and there's a freshness and creaminess about it that can't be beat.

I've already made this recipe three more times since. Fresh sliced peach and toasted chopped walnuts is a great option on top that I've tried as well.


Angela has you grate one of the apples on a box grater. If you don't have a box grater, don't worry! You can still make this recipe—just dice it like the other apple.

One time that I made it, I didn't peel the apples to save time. I honestly didn't notice the difference. So, unless you have a real aversion to apple peels, you can totally go for leaving them on and cut down a minute or two on the prep.

Really though... the prep is almost non-existent. There are six ingredients! All you've got to do after prepping the apples is mix everything together.


I really recommend using pure coconut yogurt to make this. I have used this one from the COYO brand. The coconut yoghurt adds the best depth of flavor... plus you get the full vegan experience!

However, if you are unable to get coconut, I did try using plain greek-yogurt instead; which worked fine.

Yes, you can feel the summer vibes even when the winter is here with this recipe. It's always the time for self-care, whether you are having a spa day or not. Probably or not... I say make it just to make it! No need for a special occasion to make this for.
