*Bonus* Recipe #12

Here are some (healthier) indulgent muffins to give you a boost when you hit that afternoon low. (I'm very familiar with it myself)
I am having the last two of these for snack right after I finish writing this post...
* Oil-Free Chocolate-Zucchini Muffins *
I baked up these muffins for an afternoon treat on Thursday after school was over. Whoop whoop for the long weekend!
I had three after they had cooled enough to eat from out of the oven. And I felt good about it too! I mean...they were made with zucchini for goodness sake.
Zucchini?? Yup. Let me tell you... zucchini works wonders in baked goods! Surprise, surprise! They bring an absolutely amazing moistness, and you can't taste them at all! I remember skeptical me, trying my first recipe with zucchini in it... this chocolate chip zucchini banana bread. It was absolutely delicious. Another zucchini recipe favorite of mine is this Peanut Butter Zucchini Bread Baked Oatmeal. Just delectable.
So I was pretty excited to make these muffins, in hopes of another amazingly moist zucchini baked good recipe to add to my repertoire.
Have I confessed my love for dark chocolate? Well, there’s no better time than now :). The dark chocolate chips created a deliciously gooey layer on the top of the muffins.


The muffins were not super sweet, just a touch, which made them a perfect snack with some almond milk.
Tip:
Cut the muffins in half and smear on some nut or seed butter for a next level treat.
Okay, and guess what? My sister… the picky eater who despises most vegetables and healthified food… rated these a 9 out of 10 AND asked for another one!
