Indeed, with the plethora of food blogs out there, you really don't need to get any cookbooks! While I say that, the overwhelmingness of all the recipes in circulation was exactly why I decided to cook off of cookbooks for this challenge :). I would go down rabbit holes of excessive time searching the good ol' web and overthinking all the recipes I could make, if you can relate!
Keep yourself honest is my best advice. If it looks good, make the damn recipe, no need to scroll any further! Cook recipes from the three blogs above if you want to join in the Veg Out Challenge, or are simply curios to get a taste and introduction to vegan food.
Guess what else I discovered? There are a multitude of recipes from The First Mess Cookbook shared in full on her different friend blogs! Check out this page, at the bottom under Blog Love.
This means you can make many of the same recipes I'm making from the actual cookbook, without owning a copy!
Any way that works for you, I hope you will be inspired to roll up your sleeves and try your hand at cooking up some vegan food with love. And it's not about eating "healthy". The word "healthy" has so much negative stigma surrounding it. Just stomp on it, why don't you! The goal is to make and eat food that leaves you feeling incredible inside and out, and tastes delicious, of course! That's my mission with this challenge; from my own discovery, to show that vegan food isn't restrictive and bland, it can be exciting, diverse, creative, and mouthwateringly delish!

If cooking isn't your thing, you can stick to reading my posts on the many messy endeavors to come, and be inspired to make thoughtful food choices.
It was in middle school that I learned how detrimental cattle farming and factory farming is for the environment. Simple adjustments like drinking non-dairy (plant-based) milk and eating more plant-centered meals instead of meat and beef, goes a long way. It's one of the easiest ways to give back love to mother earth, and also greatly beneficial to your well-being!
